Fresh Summer Fruit CakeThis is an ideal dessert to bring to a barbecue. The topping varies according to the season and in the summer the variety of summer fruits available means you can make a different variation each day. Either way it is so easy, yet looks very elegant. Best eaten fresh, it is almost like a tart. Ingredients:

* Serve warm or cold, not hot. The almond flavour improves with a rest period and it is easier to cut. ** The pastry lined pie plate kept in the freezer even for 15 minutes reduces shrinkage when baked.
