Annabelle White

The late summer is a perfect time to celebrate home baking. With luscious, seasonal fresh fruit and the advantage of the Kenwood mixer on the bench - it’s just so easy to prepare this baking. The secret is to keep the Kenwood mixer ready for action and you will be delighted with how you can achieve some great results.

The first cake can be made within minutes, creaming the butter and sugar independently while other kitchen activities can be undertaken. It will take you no more than a few minutes to make and it’s is both a superb warm dessert served with natural yoghurt or cream and also great for a treat with tea or coffee.

The second recipe is for a luscious combination of almond, nectarine and pastry that is both superb as an afternoon tea treat or served warm as a dessert.

Home baking with recipes like these and your Kenwood mixer gives you the confidence to serve top treats to friends and family without all the hard work - let the Kenwood mixer deliver the joy!

Annabelle White

Fresh Summer Fruit Cake

This is an ideal dessert to bring to a barbecue. The topping varies according to the season and in the summer the variety of summer fruits available means you can make a different variation each day. Either way it is so easy, yet looks very elegant. Best eaten fresh, it is almost like a tart.

Ingredients:

  • 3/4 cup sugar
  • 120g butter, melted
  • 1 tsp vanilla
  • 2 eggs
  • 11/4 cup self –raising flour
  • Approximately 4 cups sliced NZ summer fruit
  • 2 Tbsp sugar
  • 1 tsp cinnamon

Method:

  1. Place the butter and sugar in your Kenwood mixer and cream well.
  2. Add vanilla and eggs.
  3. Blend in the flour.
  4. Pour the mixture into a greased, loose-bottomed 24cm cake tin.
  5. Slice the seasonal fruit, leaving the skin on stone fruits (plums, apricots, nectarines - but peel the peaches).
  6. Place the fruit on top of the cake, piling it up and pressing down a little.
  7. Sprinkle with sugar and cinnamon and bake 180 degrees Celsius for 1 hour.

* This is an incredibly easy cake to make and you will be delighted with the results. For even better results – simply use the same ingredients but cream the butter and sugar, adding the eggs, vanilla and flour last.

Lady Glenorchy's Nectarine Tart

Use any fresh NZ summer fruit in this versatile tart.

Ingredients:

  • 1 sweet short crust pastry 23cm lined pie shell (place in freezer to keep cold)
  • 2 tbsp apricot jam, plus extra jam reserved for glaze
  • 2 tbsp flaked almonds
  • Fresh nectarines and apricots and/or pitted cherries

Almond frangipani:

  • 120g unsalted butter, softened
  • 150g (about 3/4 cup) caster sugar
  • 200g (about 11/2 cups) ground almonds
  • 3 eggs
  • 3 tbsp brandy (optional)

Method:

  1. Spread the pastry base with the apricot jam.
  2. Make the filling:
    1. Cream the butter and sugar together in your Kenwood mixer
    2. add the ground almonds, eggs and brandy (optional) and blend well
  3. Spoon this mix into the uncooked pastry shell
  4. Top with halves of fresh nectarines and apricots or cherries scattered in the gaps
  5. Bake 180 degrees Celsius for 20mins, then reduce to 150 degrees Celsius for approximately 30 minutes or until the centre is springy to touch and tart is golden in colour
  6. Whilst hot, glaze with strained and heated apricot jam
  7. Quickly toast the flaked almonds and sprinkle over the flan before serving

* Serve warm or cold, not hot. The almond flavour improves with a rest period and it is easier to cut.

** The pastry lined pie plate kept in the freezer even for 15 minutes reduces shrinkage when baked.
