The recipe I have chosen for this newsletter is from the Kenwood creative food processor cooking book that comes with the Kenwood food processors. The recipe I have chosen is Old Fashion French Soup. Serve it with home made warm bread for a warming lunch on a cold day.

Just to let you know that we will be at the Auckland Food Show 2- 5 August 2007 at the ASB Showground’s. You can find us in Hall one on stands 334/335. There will be demonstrations, show specials and also look out for Annabelle White (celebrity chef) working her magic. Annabelle will be on the De’Longhi/Kenwood stand on Thursday and Friday between 10 - 12. Look forward to seeing you there.

Feature Recipe

Old Fashioned French Vegetable Soup

Ingredients:

  • 2 large leeks
  • 5 carrots
  • 2 tablespoons butter
  • 500g potatoes, peeled and diced
  • 1.2 litres water
  • 2 tablespoons cream
  • salt to taste
  • 1 teaspoon sugar
  • finely chopped parsley, for garnish

Method:

  1. Using the fine slicing disc of your Kenwood Food Processor, process the leeks and the carrots.

Feature Recipe: Old Fashioned French Vegetable Soup

  1. Melt the butter in a soup saucepan and add the leeks and carrots. Let them get thoroughly saturated with the butter, taking care not to brown.
  2. Add the diced potatoes, water, salt to taste and sugar.
  3. Cook steadily for 30 minutes until vegetables are very soft. Allow to cool slightly then puree in your Kenwood blender in 2 batches.
  4. Taste for seasoning, and when ready to serve stir through the cream and parsley.

Preparation Time: 10 min

Cooking Time: 40 minutes

Serves: 4

Freezing: Not recomended
