The recipe I have chosen for this newsletter is one of the many yummy recipes John Borwick (Food stylist) whipped up for us at the Auckland food show. For this newsletter I have chosen his Pea and Feta spread.

Feature Recipe

Pea and Feta Spread

Ingredients:

  • 300g frozen peas
  • 200g feta cheese
  • 25g butter
  • 1tbsp extra virgin olive oil
  • Salt and pepper

Method:

  1. Microwave frozen peas on high for 4 minutes in a 1200w microwave
  2. Add butter and extra virgin olive oil. Blend together using the Kenwood wizard pro
  3. Crumble feta cheese into mixture, season with salt and pepper then blend until smooth and chunky in texture
  4. Serve on herbed crostinis

Herbed Crostinis

Ingredients:

  • 1 loaf Vogels original mixed grain
    sandwich bread
  • 3tbsp extra virgin olive oil
  • 4 tsp mixed dried herbs
  • Maldon salt

Method:

  1. Cut bread in to 4cm wide pieces, either round or square. Make 70 pieces
  2. Brush both sides of the bread with extra virgin olive oil
  3. Place onto baking tray and sprinkle with dried herbs and maldon salt
  4. Bake in 200oC for 12 minutes or until crostinis are brown
  5. Cool then place into air tight container
