Potatoes Scones

With your Kenwood food processor sitting on the bench you have an instant best friend in the kitchen – here in a matter on minutes you have thinly sliced onions, grated cheese and even crumbled cheese – all key ingredients for these delicious café style scones.

Make these today and enjoy fabulous flavours from pantry staples and very inexpensive ingredients. What a great way to use up left-over mashed potato and who doesn’t love sweet full flavoured caramelized onion to match the feta cheese – all good and so easy!

Ingredients

Note: There is no butter in this recipe.

  • 3 cups flour
  • 3 heaped tsp baking powder
  • 1 cup mashed potato
  • 1 cup tasty grated cheese
  • 1 cup milk
  • ½ cup caramelized chopped onion
  • 1 cup crumbled feta cheese

Method

  1. Combine first four ingredients with hands. Add mix and ensure the mix is quite dry. Just enough milk to bind – again do this by hand - you may not need the whole cup.
  2. Press out the mix into a rectangle and cut lengthways.
  3. Put onion on one side and top with feta.
  4. Place other layer on top and cut into 12 pieces with a sharp knife.
  5. Cook on a lined oven tray at 190degC fan bake for 12 minutes.
  6. After 12 minutes sprinkle top with cheese (tasty, Edam or left-over blue mixed in with tasty etc) and cook for another 12 minutes.
  7. Serve.
