Mediterranean fish cakes with oven baked potatoes

Ingredients

  • 400 g mixed fish fillets
  • 50 g dried tomatoes
  • 3 basil leaves
  • 1 stalk thyme
  • 2 eggs
  • 4 - 6 tbsp of flour for the batter
  • Salt & pepper

Salad

  • 200 g radicchio (leaf chicory)
  • 125 g rocket
  • 1 chicory (endive)
  • 50 ml oil
  • 50 ml balsamic vinegar
  • 50 ml water
  • 2 tbsp honey
  • Salt and pepper

Oven Potatoes

  • 600 g potatoes
  • 1 tsp dried rosemary
  • ½ tsp salt
  • Olive oil

Method

Preparing The Fish

  1. Put the fish through the kMix Mincer.
  2. Cut the dried tomatoes basil and thyme very finely.
  3. Mix everything with the remaining ingredients and season with salt and pepper.
  4. Form balls from the mixture, then lightly press the balls flat to make fish cakes.
  5. Fry them in a pan and keep hot in the oven.

Preparing The Salad

  1. Slice the salad ingredients using the kMix Roto Food Cutter.
  2. Mix the remaining ingredients for the dressing in a jar, add the dressing to the salad and toss just before serving.

Preparing The Potatoes

  1. Clean the potatoes carefully, cut into eighths and place on a baking tray
  2. Drizzle the olive oil and sprinkle the rosemary and salt evenly over the potatoes.
  3. Bake at 180 C for approx. 20 - 25 minutes.
