This is a deliciously moist and full flavoured loaf, ideal to serve with morning coffee. It can be made the day ahead and is popular with all the family. Make two if you are feeding a large group, as this loaf disappears as quickly as it is sliced! You don’t need to butter this loaf, just slice and serve.

Ingredients
Main
2 large eggs
¼ cup oil (not olive)
1 cup sugar
250g sour cream
1½ cups flour
1½ tsp baking powder
1 tsp baking soda
¼ tsp salt
Chocolate and Coconut Mix
¼ cup coconut
½ cup grated dark chocolate
Method
Mix the eggs until they are frothy.
Beat in the oil and sugar, then add the sour cream and other ingredients.
Grease a large loaf tin and place half the batter in it.
Sprinkle half the coconut and two thirds of the chocolate evenly in the centre.
Add the remaining batter and sprinkle the rest of the coconut and chocolate on top.
Cut through the mixture with a knife for a marbling effect. Bake at 180°C for 55-60 minutes.
Remove from the oven and let the loaf stand for 10 minutes, then turn out.
